My game's done this before and I've just came back to sa-mp it's returned to this look. Is there a way to fix this.

I have had this issue dozens of times before, check if one of my methods fixes your issue. What platform are you using (notebook/PC)? OS?

Select an x32 bit screen resolution and switch back to the old resolution (alternatively keep the newly selected one)

Run your gta_sa executable file with Windows Vista Service Pack 2 (right click on the file, select Properties, Compatibility, tick the "Run this program in compatibility mode for:" box, apply the change and start the game - also check if using Windows 7 will fix it if first does not work)

Re-install your game and delete all related files

Make sure your resolution is 1920x1080x32, 16bit somtimes fucks the colours ultra hard.

As mentioned above, make sure the resolution is at 32bit. I remember mine used to look like that a few years ago purely out of the blue and if I remember correctly it had something to do with the resolution.
